Peanut Butter Blossoms

This week was my Spring Break, and for it, I visited my aunt, uncle, and cousin in Arizona. The weather was perfectttt. While I was there, I obviously had to bake something. We tried thinking of something that was fairly easy to handle and delicious at the same time, so we went with cookies rather than cupcakes, and since my family enjoyed peanut butter and chocolate, I figured why not peanut butter blossoms! This recipe uses butter, not shortening, and it comes out great!




Peanut Butter Blossoms:
1/2 cup sugar
1/2 cup packed light brown sugar
1/2 cup butter, softened
1/2 cup peanut butter (Not natural!)
1 egg
1 tsp vanilla extract
1/4 tsp salt
1 3/4 cup flour
1 tsp baking soda
1/4 cup sugar (for decoration)
1 package chocolate kisses (We used the special dark chocolate and they were delicious!)

Heat oven to 375°F. Combine 1/2 cup sugar, brown sugar, butter and peanut butter in large bowl. Beat at medium speed until light and fluffy. Add egg, vanilla and salt; continue beating until well mixed. Add flour and baking soda. Continue beating, scraping bowl often, until well mixed. 

Shape dough into 1-inch balls. If you have to, feel free to place these in the refrigerator for a half hour to firm up a bit. Roll balls in 1/4 cup sugar. Place 2 inches apart onto ungreased cookie sheets.

Bake for 8 to 10 minutes or until very lightly golden brown. After removing from the oven, immediately press 1 chocolate kiss in center of each cookie. My Aunt only had organic sugar on hand, and that worked perfectly fine as well. For the holidays, Hershey's puts out different types of kisses, great idea for making things a little more festive. Also, try these with white chocolate!
