I've been on a ridiculous peanut butter and chocolate kick lately. I don't quite know what it is, but the combination is just ridiculous and amazing! Or just ridiculously amazing :) We chopped up delicious chunks of Hershey's chocolate and put them in a peanut butter cookie batter. The result? These delicious looking creatures below. Since the recipe is actually a peanut blossom recipe, the cookies maintain their round shape, so you'll need to flatten the top during baking.
Peanut Butter Cookies
1/2 cup shortening
3/4 cup creamy peanut butter
1/3 cup white sugar
1/3 cup light brown sugar
1 egg
2 tbsp milk
1 tsp vanilla extract
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips or chunks
(Can add more or less chocolate as desired)
Heat oven to 375 degrees. Beat shortening and peanut butter until pale and well blended. Add the sugars and beat until light and fluffy. Add egg, milk, and vanilla and beat well. Stir the flour with the salt and baking soda and slowly incorporate it into the wet mixture. Mix in the chocolates.
Shape the dough into 1 1/2 inch balls. Place on a baking sheet and bake for 8 minutes. Use the back of a fork to gently press down on each cookie top to flatten slightly. Place back in the oven for 2 minutes or until done. Cool Completely.
